Recipe: Gluten Free Peanut Butter Cookies

Easy to remember gluten free peanut butter cookies.

Preheat oven to 350

Mix together:

1 Cup Chunky Peanut Butter

1 Cup Sugar - plus extra to roll in

1 Egg

1 tsp Vanilla (optional)

Shape into 1" balls, roll in extra sugar. Flatten with bottom of glass or cross with fork.

Bake for 8-10 mins.

Recipe can be easily doubled. Optional - melt chocolate and drizzle over cookies once cooled.
